Get a Lunch Box Reboot With Health Connection

Ingredients

  • 2- 6-inch flour tortillas
  • 4 oz. lean roast beef – sliced thin or chipped
  • ½ cup easy roasted corn salsa (recipe follows)
  • ½ cup shredded lettuce
  • ¼ cup shredded cheese
  • ¼ cup guacamole
  • 2 T fat free sour cream
  • 1 piece of fruit – apple, orange or banana

Directions

  • Place roast beef in flour tortillas and wrap with foil sheet or place in plastic bag.
  • Package your corn salsa, cheese, guacamole, shredded lettuce, and sour cream in small plastic containers (2 oz. or 5 oz. work great).
  • Grab a piece of fruit and your insulated lunch box.
  • Remove ice pack from freezer and add to lunch bag.
  • Place all ingredients in lunch box and enjoy.

Easy Roasted Corn Salsa
Ingredients

  • ¼ cup roasted corn
  • ¼ cup diced fresh tomatoes
  • 1 tablespoon diced red onion
  • 1 teaspoon cilantro, chopped
  • Salt and pepper to taste

Directions

Place all ingredients in bowl and mix well.

Chef’s tip: Fill a zip-lock bag with about a cup of water. Let air out and zip close. Place into another bag and lock to prevent leaks. Lay flat in freezer and let freeze. Wrap with foil and place in lunch box to keep things cold. Refreeze for more than one use.
